Nutorious Barley Salad
1 c quick cooking barley
2 c water
2 chicken bouillon cubes
1/4 c Extra virgin olive oil
2 medium carrots, diced
2 celery ribs, diced
1/4 c diced onion
1/2 c Nutorious Top it Off Cherry Vanilla
Dissolve bouillon in water, bring to a boil. Add barley. Cover and reduce heat and simmer for about 10 minutes. Remove from heat and let stand covered for 5 minutes.
While barley is simmering, cook carrots, celery and onion in a heavy skillet over medium heat. Remove from heat when onions are opaque.
Toss barley, vegetable mixture and nuts in a large bowl. Season with salt and pepper.
